This remarkable coffee comes from the Janson family estate in the highlands of western Panama. This green tip Gesha was harvested on a crescent moon cycle when the sap in the coffee tree is moving upwards to the cherries, improving the sweetness of the coffee. This coffee is an Natural process and was fermented anaerobically for 48 hours before being slowly sun dried for 26 days.
This is a perfect example of why the Gesha varietal grown in Panama commands such extremely high prices.
